Our Family’s Secret Irish Scones Recipe ☘️

Happy St. Patrick’s Day!

Mary Nash, a very sweet family friend from Ireland 🇮🇪 was kind enough to give me her Irish ☘️ scone recipe.

The Recipe:

3 Cups All Purpose Flour

2 Teaspoons Baking Powder

1/4 teaspoon Salt

1 Teaspoon Baking Soda

1/2 Teaspoon All Spice (optional)

1/2 cup Granulated Sugar

1/2 Stick Butter

1 Cup Dried Fruits Washed and Dried (Raisins, currants, cranberries, use a mixture of all)

1 Cup Buttermilk

1 Large Egg Lightly Beaten

Preheat oven to 425F. Grease Baking Tray (1 Large or 2 Rounds)

Sprinkle lightly with flour

Sift the flour, baking powder, salt, baking soda and all spice.

Into a bowl, mix, cut the butter and rub in until it becomes crumbly, add the sugar and fruit, mix well. Add the buttermilk to the egg, stir, make a well in the center.

Add enough liquid to make a soft dough (I keep back a few tablespoons of liquid brush over the scone tops, if you like them more crispy, place a small piece of butter on top and sprinkle a little sanding suger over.)

Turn onto floured surface, knead lightly to shape, roll out to 1/2 inch thick, medium cutter will give you 14 to 16 scones. Gather up the trimmings, roll till all used.

Bake for about 15/20 minutes until well risen, and golden brown. Reverse the position of tray halfway through cooking.

Cool, and serve with butter, jam and jelly.

Absolutely scrumptious! Save this one. It’s a family heirloom recipe.
