Nothing is better in the fall and winter than the perfect Apple Pie. To keep you from heading grocery store, every time you need apples, hit your local orchard, grab a few bushels of your favorite apples ( I love Cortland and Northern Spy), make several quarts of this Easy Apple Pie Filling once and use it all season!
Peel and slice apples. Dill quart jars tightly, cover with syrup. Process 20 minutes in water bath.
SYRUP:
4 1/2 cups sugar
1 cup cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
10 cups water
Cook syrup until thick and bubbly. Add 2 Tablespoons lemon juice.
